Cauliflower oriental patties
- red lentils - 1/2 cup
- oat flakes - 1 cup
- cauliflower - 1 head
- onion - chopped
- garlic cloves - cloves, minced
- black and white sesame seeds
- pumpkin flour - 1 tbsp, (or breadcrumbs)
- Spices ingriedients
- turmeric - 1 tsp
- ground cumin - 1 tsp
- smoked paprika - 1 tsp
- chilli powder - 1 tsp
- salt - to taste
- pepper - to taste
Soak the lentils for half an hour in warm water. Wash, add to a pot with almost 2 cups water and cook on low-medium partially covered for 25 minutes or until softed. Cook until all the water is absorbed or pour of excess water (when water is not absorbed).
Cut the cauliflower to small pieces, add to a pot, add hot water and cook it until softed. Mash the softed cauliflower (in a food processor or by hand).
Cut the oninon, preheat a pan with oil and cook it lightly, add all the spices, mix it and leave it for few seconds (not too long, than can be paprika bitter).
Add mashed cauliflower, cooked red lentils, oat flakes, onion with spices, mashed garlic, sesame seeds, salt, pepper to a bowl and mix it well. Taste and adjust salt and spice. Add one spoon of pumkin flower (or other kind of flour) and mix it until the texture easily comes together (add more flour or breadcrumbs if needed).
Shape into burger patties by hand. Bake ca. for 20 minutes at 180°C (or more if needed).
Note: The patties can be made ahead and kept refrigerated or shaped and frozen. They can also be served as a hamburger, with salad or with sauce.
