Chocolate chip cookies
- spelt flour - 2 cups
- brown sugar - 3/4 cup
- almond milk - 1/2 cup
- vegetable oil - 1/2 cup
- baking powder - 2 tsp
- cinnamon - 1 tsp, grounded
- dark chocolate - 100g, chopped
- salt - pinch of
Preheat the oven to 200°C and line a baking sheet with parchment paper. In a medium bowl, mix together the flour, baking powder, cinnamon, chocolate and salt. Set aside. In a large bowl mix together all wet ingredients (milk, oil).
Gradually add the dry ingredients to the large bowl, whisk until the dough is smooth and all is combined. Roll dough into balls and flatten, slightly, into discs.
Bake for 8-10 minutes or until the cookies are golden brown around the edges and still soft in the middle. Remove from the oven and let them cool on the baking sheet for at least 15 minutes.
