
Creamy celery soup
Ingredients
- celery stalks - 5-6 large, chopped
- onion - large, chopped
- carrot - large, chopped
- garlic - clove, chopped
- vegetable broth - 3 cups
- potato - smaller, chopped
- coconut milk - 2-3 tbsp
- fresh ginger - 1 cm, minced
- vegetable oil - 1 tbsp
- ground cumin - pinch of
- salt
Instructions
Heat the oil gently in a large saucepan and add the chopped celery, onion, carrot, potato, garlic and ginger.
Cook it until vegetables are soft (not browned!). Add good pinch of ground cumin and vegetable broth. Simmer the soup for 10-15 minutes and then pour into a blender. Add coconut milk, salt and blend it until smooth and creamy.
Note: One tip how to cook the soup much faster - the smaller you cut the veggies, the quicker your soup will cook down the line.
