Quinoa stuffed mushrooms
- 1 cup cooked quinoa
- 2 cloves garlic - minced
- 1 small onion - chopped
- 1 carrot - chopped
- 1 red pepper - chopped
- 8 large mushrooms - cleaned and stems pulled out and set aside
- 200 ml coconut milk
- 1 tsp coconut oil
- salt, pepper, thyme, ground cumin - to taste
Preheat oven to 200°C. Finely chop the stems of the mushrooms and set aside. In a large pan combine coconut oil, garlic, onion and cook until softened. Add all the spices and let fry for 1-2 minutes (don't be afraid of spices use enough, according to your taste).
Add quinoa, diced mushroom stems, carrot and coconut milk. Mix well and cook until combined. Add chopped red pepper. Remove from heat. Stuff each mushroom with filling. Place on baking sheet and bake for 12-18 minutes.
Garnish with spring onion and serve immediately.
