Make an extraordinary spread, filling for sandwiches, or serve with chips, crackers, organic tortilla, pita bread or raw vegetables!
- kidney beans - 1 can
- onion - 1/2 small, finely chopped
- sesame seeds - 1 tsp
- lemon juice - 1 tbsp
- delicate yeast - 1/2-1 tbsp
- garlic - 1 clove
- walnuts - handful
- handful fresh parsley - minced
- salt and pepper - to taste
Combine beans, water and onion in a saucepan and bring to a boil. Turn heat down to low and simmer until tender, about an hour or use canned kidney beans.
Place all ingredients in a food processor or blender, except a little bit of the bean cooking liquid. Slowly add the bean cooking liquid until it is the right consistency.
Note: The flavour improves with age, so if you have time, let it chill for several hours or overnight. Check seasonings and add more lemon juice, pepper, or salt to taste.
