Roasted garlic cabbage wedges
- red cabbage - 1/2 small head, cut in wedges
- white cabbage - 1/2 small head, cut in wedges
- garlic - 2 cloves, sliced
- lemon juice - 1-2 tbsp (it's up to you how lemony it should be)
- olive oil - 2 tbsp
- salt, peper
Preheat oven to 200°C and line a casserole dish with baking paper. Whisk lemon juice and olive oil together. Arrange the cabbage wedges on the prepared casserole. Brush with olive oil mixture, then sprinkle generously with the garlic, salt, and pepper. Roast for 20–40 minutes, until crispy around the edges.
Serve warm or cold. Roasted garlic cabbage wedges go amazingly with mustard yogurt dressing.
